I'm not picky. I'll write about most anything, even a recipe, but you will need to ask Fern what wine goes with it.

Atlas Stunted

Atlas Stunted

I made rouskum yesterday.
An Old Danish recipe that mother used to make,
it was she who taught me
when I was a just a kid…Everyone loves it.
It’s a cream base soup
loaded with peas, carrots, potatoes, and turnips
cut into little squares.

When Winter Turns On You

I make it twice a year…Usually,
once when winter turns bitter
and the world gets dark and cold,
just to remind me
of the care of mother’s love,

the touch of her hand,
the smells in her apron.

In the Olive Spring

And once in the olive spring
to remind me of father’s smile,
his kindness when no one
was looking
. Those days
when the vegetables
came fresh from Father's garden
and the world was shadowed in green.

Happy Faces

When I make rouskum
the whole family comes over
and it helps to displace
the weight of this old world
that rest s on my shoulders,
to see all of those happy little faces
gathered round the table
whenever Jack Frost
thinks he’s got the best of me.

Recipe for Rouskum

Rouskum
Six large carrots peeled and sliced.
Three large potatoes cut into ½” squares.
One large turnip cut into ½” squares.
½ pound of peas, fresh or frozen.
Boil carrots in salted water until almost tender, then drain.
Add the rest of the vegetables to the drained carrots.
Cover with three to four cans of evaporated milk.
(Or you could make your favorite cream base
Like you would for almost any chowder, but
The evaporated milk is much faster and easier
And the potatoes will thicken it deliciously)
Add one table spoon of butter.
Add 1/2 teaspoon of celery salt
Salt and pepper to taste and simmer
Until all the vegetables are soft.
About 45 minutes.
Serve with warm homemade bread
And ask Fern what wine he would suggest.
